There's a sandwich that's gone viral this summer... one I've never heard of before... the Watermelon Sandwich.
Must be the heatwave!
There are several variations-- like a mozzarella, pickles and mint Watermelon Sandwich, or mozzarella, pickles and basil, or a feta, ham and balsamic Watermelon Sandwich.
And before you start envisioning soggy bread, this so-called sandwich uses the watermelon slices as the "bread" with cheese, pickle, etc in-between.
Sounds a lot like the watermelon salad with feta and mint that I had a few years ago at a local farm-to-table restaurant. It was amazing. And I'm thinking it would be a bit neater, too.
If you try this, have plenty of napkins!
